First off… can you believe that Summer is almost over?!?! How the heck did that happen! My oldest daughter returns to school today and my little one starts next week. In addition to this Summer flying by just as fast as the speed of sound, I also started working Full-Time outside of the home again. Add a crazy work schedule, not being able to spend more time with my girls all Summer, buying school supplies and you end up with one over-worked stressed out mom! Now if you’ve been following me for any amount of time you know that I love me some wine! One of my favorite sayings is “Everyone needs to believe in something… I believe I’ll have another glass of wine!”
So in today’s Wine Wednesday I thought I would share a wine slushy recipe. With Summer winding down, what better way to enjoy the warm weather than with a nice, cool slushy drink!
This recipe will serve approximately 6 people, but hey if you’re like me, then you won’t want to share!
- 1 bottle of Riesling
- 2 cups hulled strawberries
- 1 tablespoon of fresh lime juice
- 2 tablespoons of sugar
Set aside one cup of Riesling in the fridge to chill. In a food processor, puree strawberries with the remaining wine, lime juice and sugar. Pour the mixture into ice-cube trays and freeze until solid. When you’re ready to serve (or drink), puree the ice cubes with the remaining wine in your blender.
